Our Story

THE PEOPLE

Mike Ference and Kathleen Kamouyerou-Ference opened up a small Greek pita stand in a garage outside of Pittsburgh, Pennsylvania in a small town called McMurray in 2004. After attempting to franchise a few locations with sons Andreas and Michael, the family reached out to Marcus for help.

The family accepted the deal with Marcus on CNBC’s hit show “The Profit” and history was made. Marcus has always wanted to find an opportunity to share his culture and love of Greek food with the world. His family is Greek and they enjoyed many of the tasty cuisines the region had to offer.

Marcus Lemonis started by creating a new name and re-branded the franchise. The family went through months of trials, tests, and hundreds of old family recipes to create the perfect tasting food with simple, flavorful ingredients. The stores were given a new name, new menu, and new store design to have a consistent look and feel. The ordering process was simplified to be more efficient and the business model was perfected to get it ready to be franchised across the country.

The Simple Greek is utilizing a build-your-own assembly line style set up in an open kitchen to show off all of the fresh food being prepared. After a new menu and menu board were created, the ordering process was simplified to fit an easy assembly line layout. Each bowl, pita, or yogurt is made right before your eyes as you go down the line.

All you have to do is simply step up to the counter and create your own from a variety of fresh and homemade proteins, toppings, and sauces. There is a variety of different sides, sweets, and drinks you can add to your order. You can also build your own Greek yogurt creation with a variety of sweet and savory options. As you are moving down the line, you can see the variety of different homemade products being made right before your eyes.

The company’s operational and training team has built systems and procedures that are key to ensuring the efficiency and profitability of the brand. Utilizing daily checklists for training, cleaning, labor, inventory, and marketing will keep you organized and allow you to multitask in a fast moving environment.

We cut the meat fresh off the spit right when you walk in. We toss the hand-stretched pitas on the grill to warm them up. Imported olive oils, red wine vinegars, cheeses, Kalamata olives, spices, rice, and lentils are used to add the most authentic Greek flavors. We use locally sourced organic honey imported from the Cretan Islands. Even our famous Greek fries use fresh cut fries topped with imported Feta cheese, red wine vinegar, oregano, and garlic salts.

Our authentic Greek yogurt bar will allow you to create your own yogurt masterpiece with a variety of sweet and savory combinations. Fan favorites include Cretan honey, chopped walnuts, fresh berries, granola, figs, dark chocolate, lutenica, spicy harissa, and more. Our signature Greek yogurt is made the way it was always supposed to be made back home: simply strained and naturally thickened with organic goat’s milk.
